Maryland Crab Meat Casserole
  • ½ cup butter
  • 3 tablespoons flour
  • 2 cups milk
  • 2 tablespoons onion, minced
  • ¼ teaspoon lemon zest
  • 1 tablespoon pimento, minced
  • 1 tablespoon green
  • pepper, minced
  • ½ teaspoon celery salt
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 egg, beaten
  • 3 cups crab meat
  • ½ cup bread
  • crumbs
  • ½ cup sharp
  • cheddar cheese, grated

Preheat the oven to 350 degrees. Melt butter on low to medium heat. Stir in flour until smooth. Add milk and cook until thick. Add onion, lemon zest, pimentos, green pepper, celery salt, table salt and pepper. Temper the beaten egg by mixing it with two tablespoons of hot flour mixture. Add the egg and combine. Fold in crab, top with cheese and bread crumbs. Bake dish for 10 minutes or until golden brown.
