Pecan Pie Muffins
- 1/2 cup (1 stick) butter, softened
- 3/4 cup light brown sugar, packed
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 3/4 cup pecans, chopped
Preheat oven to 350 degrees. Grease and flour 8 muffin tin cups or use paper liners. In a medium bowl, cream butter and sugar. Add eggs and mix well. Add flour and stir just until combined. Stir in pecans. Spoon batter in prepared muffin cups, dividing evenly. Bake for 25 minutes. Serve warm with butter if desired. Makes 8 wonderful muffins.
