2 cups cellentani pasta
9–10 cherry tomatoes, diced
1 shallot, diced
1/2 cup mayonnaise
3 teaspoons white wine vinegar
2 teaspoons sugar
4 tablespoons sweet pickle relish
1 medium cucumber, diced (optional)
salt and pepper to taste
Cook pasta and drain. Mix all ingredients together except pasta. Place pasta in a large bowl. Pour sauce over pasta and gently mix. Eat warm or refrigerate overnight for more flavor. Serve warm or cold!
