Peach Pudding


1 envelope unflavored gelatin
1/4 cup cold water
1 can peaches, sliced
1/2 cups peach juice and water
2 tablespoons sugar
Dash salt
1/3 cup heavy cream, whipped
1/4 teaspoon almond extract
1/2 package of vanilla wafers

Soften gelatin in cold water for 3 minutes. Drain juice from peaches, measure and add water to make 1-1/2 cups. Stir sugar and salt into softened gelatin until dissolved. Reserve 12 peach slices. Dice remaining peaches and add to gelatin mixture. Chill until mixture begins to set. Fold in whipped cream mixed with almond extract. Line bottom and sides of an 8-by-8-inch dish with wafers. Add peach mixture and chill for 2 hours until set. Garnish with 12 peach slices before serving.
