Ingredients: 

  • 2 eggs, slightly beaten
  • 1 cup yellow cornmeal
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 (17 oz) can cream-style corn
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 pound ground beef
  • 2 cups shredded cheddar cheese
  • 1 large onion, chopped
  • 2 – 4 jalapeno peppers, chopped

Combine eggs, cornmeal, baking soda, salt, cream-style corn, milk and vegetable oil in a bowl and set aside. Cook ground beef until browned, drain well, and set aside.

Pour half of  cornmeal mixture into a greased 10 ½ cast iron skillet. Sprinkle evenly with beef and top with cheese, onions, and peppers. Pour remaining batter over top. Bake at 350 degrees for 45-50 minutes before serving. Makes 6 servings.
