Ground Beef Casserole
- 1 large onion, chopped
- 2 tablespoons butter
- 1 large green pepper, chopped
- 1/2-1 lb. mushrooms, cleaned and sliced
- 1 1/2-2 lbs. ground beef
- 2 cans cream of mushroom soup
- 1 cup sour cream
- 6 cups egg noodles, cooked
- 1/4 cup pimentos, chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- bread crumbs, buttered
- parmesan cheese
Brown onions in butter, then add green peppers and mushrooms and saute until done. Remove vegetables from pan and place in a large mixing bowl. Brown the ground beef, adding salt and pepper. Add remaining ingredients to the vegetable mixture in this order: beef, soup, sour cream, noodles and pimentos. Place in a 13×10 dish and top with parmesan cheese and bread crumbs. Bake at 350 degrees for 30 minutes. This recipe will freeze well. Enjoy!
