Roasted Sweet Potatoes
- 3 sweet potatoes, peeled and cut into bite size cubes
- 1 tablespoon butter
- 2 teaspoons olive oil
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ginger
- salt to taste
Preheat the oven to 350 degrees. Coat a small baking dish with cooking spray and add potatoes. Melt butter then pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt. Add more sugar or cinnamon if desired. Toss all ingredients to coat evenly. Bake for 60 minutes, stirring sweet potatoes twice during roasting.
